No-Bake Chocolate Oatmeal Cookies Recipe

Hi, I am Eugenie. Today I am making no-bake peanut butter chocolate chip oatmeal cookies. It’s super fast cookies with only 6 ingredients.

No-Bake Chocolate Oatmeal Cookies Recipe

Yield 8 cookies


    • 3 tablespoons granulated sugar
    • 3 tablespoons light corn syrup (*Get homemade corn syrup substitute recipe if you don’t like commercial corn syrup.)
    • 2 tablespoons creamy peanut butter
    • 3 tablespoons semisweet chocolate chips
    • 1/2 teaspoon pure vanilla extract
    • 2/3 cup quick oats


In a sauce pan, add in corn syrup and sugar. I am using white corn syrup today. And over medium-high heat cook until sugar dissolves. When the mixture starts to boil, immediately remove from heat.

And add in peanut butter and quickly mix until smooth. Then add in chocolate chips, and vanilla extract and roughly fold until combined. Add in quick oats and stir until well coated.

Drop tablespoonfuls of batter onto a parchment paper lined baking sheet. As you see, today I am not making a lot of cookies. And press down the cookies with a back of a spoon to make them flat.

Then let cool completely.

Voila, this is very quick and easy no-bake chocolate peanut butter oatmeal cookies. You can also use corn flakes instead of oatmeal.

Bon appetit. The chocolate flavor in these cookies is stronger than salty peanut butter.
