Vanilla cupcake with buttercream icing

Hi, I have a very easy basic vanilla cupcake recipe for today.

 

Vanilla cupcake with sugar icing

Yields 12 cupcakes

Level: Easy
Prep time: 20’
Cooking time: 25’

Ingredients

For cupcakes:
135 g unsalted butter at room-temperature
1/2 teaspoon pure vanilla extract
160 g white sugar
3 eggs
330 g flour
3 teaspoons baking powder
70 ml milk

For the icing:
330 g icing sugar (powdered sugar)
20 g melted butter
1 spoon hot water
1 teaspoon very fine lemon zest (optional)

Method

1. Preheat the oven at 180 degrees C. Line a cupcake pan with cupcake liners.

2. In a bowl, mix butter with white sugar.

3. In another bowl, whisk the eggs, vanilla extract, and milk all together.

4. Add 3 into 3 and mix well.

5. Sift flour. Whisk flour and baking powder together.

6. Add in flour mixture into liquid mixture and stir until combined.

7. Fill the cupcake pan with the batter and bake in the over for 25 minutes.

8. Out of oven, let the cupcake in the pan for 5 minutes and then cool them completely on a wire rack.

For Icing:

1. During the cupcakes are being baked in the oven, sift the icing sugar in a bowl.

2. Add in the melted butter, hot water, and lemon zest. Then put the mixture on bain-marie and stir until well combined.

3. Dip the now-cooled cakes into icing mixture.
