I made caramel grapes and apples yesterday and now my whole family is enjoying these.
It’s really easy to make and they are beautiful small little sweets.
For about 40 grapes & 2 apples
Level: Easy
Cooking time: 20 min (except sitting time)
Ingredients
1/2 cup caster sugar (113 g) *
2/5 cup heavy cream (95 ml)
1/5 cup corn syrup (47 g)
1 & 1/2 teaspoons unsalted butter (7 g)
1/2 teaspoon salt (2.5 g)
Method
1. Wash grapes and remove wax of apples. Insult wooden sticks on each fruit. And put apples and grapes in the refrigerator overnight.
2. Put all the ingredients in the sauce pan with thick bottom and cook until 250 degrees F (121 C) (about 12 minutes) on medium high heat. Then let cool the caramel to 203 degrees F (95 C).
3. Coat apples and grapes with caramel and sit them on a silicon mat.**
4. Reserve in the fridge for a few hours to overnight. They can be ready-made one day in advance.
Notes
* If you want smokier caramel, use packed brown sugar.
** Dip the bottom of apples and grapes into peanuts (salted, chopped) as you want.
