French meringue is very basic in baking. You can make many desserts such as macarons and Japanese sponge cake (kasutera) with French meringue.
Ingredients
3 eggs, medium-sized, separated
½ cup and 1 teaspoon of caster sugar (61 g)
Method
On medium speed, beat the egg whites until hard peaks.
Then add sugar little by little. Keep beating until soft peaks.
This is French meringue.
