French coconut macarons – gluten free recipe – Gluten Free Recipe

Today I am making one of my favorite French little sweets, Congolais, aka Rochers a la noix de coco. These are lovely soft macarons with full coconut flavor. I added apricot jam for softer texture and fruity flavor. Once I taste this coconut macaron, I cannot stop. I end up finishing three or four of them right away! 🙂

 

Rochers a la noix de coco – Congolais Recipe

For 10 macarons

Cooking time: 15 min

Ingredients

    • 1 egg, egg white and egg yolk separated
    • 80 g coconut powder
    • 1 teaspoon apricot jam (5 g)
    • 70 g caster sugar
    • Pinch salt
    • Melted chocolate for garnish, optional

Method

1. Preheat the oven to 180 degrees C (355 degrees F). Line the cookie pan with parchment paper.

2. In a bowl, beat the egg white for one minute. This is to make the egg white liquedified, not incorporate the air.

3. Add in egg yolk and apricot jam and whisk to combine.

4. Pour in sugar, salt, and coconut powder and stir until homogeneous. The batter should be humid and compact, not liquid.

5. Place tablespoonfuls of batter on the parchment paper or cookie pan. Chocolate silicon molds work fine. Bake for 15 minutes or the edges become golden brown. Out of oven, cool the cookies completely on a wire rack.

6. Drip melted dark chocolate over the cookies. (optional)

Note

Children and adults alike love to have coconut macarons dipped in melted dark chocolate. That’s a real treat in my home. 🙂
