Mini Strawberry Shortcake Recipe – Summer Dessert
for 8-9 shortcakes
Ingredients
- 120ml milk (1/2 cup)
- 1 egg
- 3 cups all-purpose flour (375g)
- 3 teaspoons baking powder
- ½ cup granulated sugar (100g)
- ¼ teaspoon salt
- ½ cup unsalted butter, cold, cubed (113g)
- Additional beaten egg for brushing
For topping:
- ½ pound strawberries (225g)
- 2 tablespoons granulated sugar
- a few drops of pure vanilla extract
- Whipped cream
Tools for This Recipe
- Food processor, or
- Pastry blender
Directions
First, wash ½ pound of strawberries, hull, and slice strawberries. Then transfer strawberries to a mixing bowl and add in 2 tablespoons of granulated sugar. And mix. Set aside.
Then in a large mixing bowl add in 1 egg and ½ cup of milk and beat to combine. And let sit at room temperature.
In a food processor add 3 cups of all-purpose flour, 3 teaspoons of baking powder, ½ cup of granulated sugar, ¼ teaspoon of salt, and ½ cup of cold unsalted butter. And pulse until fine sands.
Now add the dry mixture into the wet mixture and fold until just moistened. Then transfer the dough on a lightly floured working surface and flatten a little. It should be about 1 inch thick. And stamp out with a round pastry cutter and lay on a non-stick baking sheet or parchment paper lined baking pan. Finally glaze with lightly beaten egg on top.
Bake at 390 degrees F. (200C) for about 13 minutes, or until golden brown. Then let cool on a wire rack for 5 minutes.
To build a strawberry shortcake, First, halve a shortcake horizontally. And separate strawberry water from strawberries. And add a few drops of pure vanilla extract in the strawberry water and mix. Then brush the shortcake bottom and top with the mixture. And arrange strawberries on the shortcake. Then pipe whipped cream over the strawberries. And cover with the shortcake top. Finally make a little crown by piping a whipped cream and placing a little piece of strawberry on top.
Voila, A mini strawberry shortcake. Isn’t it cute?

Q: Can I do it by hands if I don’t have a pastry blender as well?
A: Yes, it takes time and could be messy yet it is possible. I don’t think I fully demonstrated in any vid but I used to do ‘sablage (breaking cold butter in dry ingredients until fine sands)’ by rubbing butter between index finger and thumb in the cooking classes in Paris.
