Chia Seed Strawberry Banana Parfait

Chia seed is huge among vegans these days. It is a healthy food: it is rich in protein and fiber. In fact chia is new to western world; it was cultivated by the Aztec. It was approved by EU as novel food in 2009. Here goes a healthy way to enjoy gelatinous chia seeds soaked in soy milk.

 

Ingredients

1 Tablespoon chia seeds
1/2 cup soy milk
3 teaspoons maple syrup
1/2 teaspoon pure vanilla extract
5 strawberries, hulled and sliced
1 ripe banana, sliced
2 tablespoons oatmeal
Powdered cinnamon for garnish

Method

1. Soak chia seeds in soy milk for one hour. Then add in maple syrup and vanilla extract to and mix well together.

2. Place strawberry slices, soaked chia seeds, banana slices, and then oatmeal in a jar or in a glass.

3. Dust cinnamon a little on top and serve.
