
Green Tea White Chocolate Raspberry Mini Tarts Recipe

Do you love white chocolate? If you do, how about making these mini tarts this weekend?
Due to its unique flavor, texture and taste, white chocolate is not for everyone. But I was totally inspired by Sadaharu Aoki. He is a famous Japanese pâtissier who has a few outlets in chic quartiers in Paris. He uses green tea often when making French pastries, which seem to please the most refined palates of Parisiens.
I made these tarts in Paris last summer but didn’t have a chance to post them so far. Now I am happy to share this recipe with you. Happy cooking! 🙂

Mini tarts : perfect tea companions
Green Tea White Chocolate Raspberry Mini Tarts Recipe
Ingredients
6 3-inch mini tart shells – Watch tart shell recipe below.
For white chocolate layers:
4 oz white chocolate bar, chopped (113 g)
1/3 cup double cream, boiled (80 ml)
1/3 half stick unsalted butter (20 g)
1/4 teaspoon pure vanilla extract
1 teaspoon green tea powder
Raspberries
Confectioners’ sugar for garnish, optional

White chocolate: Some people love it, other people leave it.
Method
Make white chocolate layer Melt white chocolate in a double boiler stirring occasionally. Add in boiled cream and stir to combined. Then add in butter until homogeneous. Set aside 1/4 of the mixture in the refrigerator. Then divide the other 3/4 white chocolate equally into mini tart shells. Chill in the refrigerator overnight.
Make green tea layer Melt the 1/4 of white chocolate mixture on a double boiler. Then stir in green tea powder until blended. Divide on the top of white chocolate filling to make a thin green layer. Chill in the refrigerator for 2 hours, or until set.
Serve Dust with confectioners’ sugar on raspberries (frambroises) and arrange them decoratively on top of mini tarts and serve.

Use green tea powder with bright green color for pastry.
