I love all lemony things! Lemon bars(American), lemon tarts (French), lemon cakes, lemon pudding (English), etc. It is so popular in my family during tea time as well.

Lemon Bar Recipe – Easy American Square Bar

Ingredients
For crust:
75 g all-purpose flour, sifted
15 g confectioner’s sugar
5 g corn starch
Pinch salt
80 g butter, cut in small squares (cold just out of refrigerator)
For flan filling:
120 ml lemon juice (2 lemons)
160 g caster sugar
4 eggs
Pinch salt
Zest of 1 lemon
16 g all-purpose flour
For serving
Confectioner’s sugar for dusting
Lemon zest for deco (optional)
Method
Preheat the oven to 180 degrees C.
Make the crust Pour flour, confectioner’s sugar, corn starch, salt, and butter in a mixer and ground until it seems like sands. Fill the bottom of pan with the crust mixture evenly. Firmly press the crust with spoon. Bake for 15 to 20 minutes or until golden brown. Let it cool for 10 minutes on a wire rack.
Lower the temperature of oven to 150 degrees C.
Make the flan filling In a large mixing bowl, whisk lemon juice, sugar, eggs, salt, lemon zest and flour until homogeneous. And pour the filling over the crust in the pan.
Bake for 35 minutes, or until the flan filling is set. Then let it completely cool on a wire rack.
Serve Cut into squares and dust with confectioner’s sugar before serving.
Notes
Don’t use silicon pans for lemon bar. Silicon pans are flexible, the flan mixture would go under the crust.
To get more juice out of lemons, prick the skin with a fork and microwave them for 15 seconds before juicing. This helps break down the cells and membranes for better juicing.
