It’s almost Summer here. And it’s time for ice cream, ice pops, iced coffee, bubble tea, etc. So, today I am making extremely simple cold dessert.
Red Bean Yogurt Popsicle Recipe Azuki B.B.Big 비비빅 만들기
For 2 ice pops (130ml each)
- 6 oz plain yogurt (170g)
- 3 oz sweet red beans 단팥 (85g)
- 1 teaspoon acacia honey
First, add in two packages of yogurt into a mixing bowl. I used Yoplait plain today. One package is about 3 oz.
And add in 1/3 cup of sweet red beans. If you don’t have homemade sweet red beans, 단팥 in Korean. You can use whole red beans for patbingsoo 밭빙수, which can be found at any Asian supermarket.
And I am adding 1 teaspoon of acacia honey. Taste and you can adjust the amount of honey as you like. Then stir until homogeneously mixed.
And transfer to ice pop molds. I made only two bars today but you can easily double or triple the portion. Just remember that I added 2 parts yogurt and 1 part sweet red beans.
And store in the freezer for only 3 hours. Yes, it’s better to enjoy on the same day.
Out of freezer, place the bars in the warm water for 5 seconds. This way it’s easier to remove the mold.
My parents love this, it’s healthier version of old Korean ice pop, B.B.Big 비비빅.
