Heavenly 6-ingredient eggless Rocky Road ice cream cake with double chocolate ice cream and slightly burnt marshmallows. Watch how easy to make an ice cream cake at home. And yes, it’s true. I couldn’t sleep well with this in the freezer last night.
Rocky Road Ice Cream Cake
6-ingredient recipe
One 6 inch round x 2 inch tall (15cm x 5cm) cake
Ingredients
- 1/2 cup almonds, toasted (120ml)
- 1 cup heavy cream (240ml)
- ½ cup + 2 tablespoon sweetened condensed milk (150ml)
- 4 tablespoons unsweetened cocoa powder * (60ml)
- 1/4 cup milk chocolate chips (80ml)
- 20 large marshmallows, cut in half (or equivalent amount of small marshmallows)
Extra chocolate chips and toasted almonds for decoration
* If you want to reduce the bitterness of unsweetened cocoa, reduce cocoa by up to two tablespoons.
Directions
First, line the bottom of a mold with a parchment paper. And line the side with plastic cake wrap. Also I often make individual ice cream cupcakes with a lined cupcake pan.
And arrange 1/2 cup of toasted almonds on the bottom of the mold to make a single almond layer. Any nuts are okay. Personally I like almonds, walnuts, and cashews for ice cream. With bottom layer it will be easier to transfer the cake in and out of the fridge when the ice cream is slightly melted.
Now in a large cup add in 1/2 cup and 2 tablespoons of sweetened condensed milk and add in 2 tablespoons of unsweetened cocoa powder. And whisk to combine. Today I am adding only 3 tablespoons and it’s mixed fairly well without sifting. Then add in remaining 1 tablespoons of cocoa powder. And mix until homogenously combined.
Then in a mixing bowl add in 1 cup of heavy cream and beat until stiff. The cream should contain more than 36% milk fat.
Then add small amount of whipped cream into thick cocoa mixture and whisk to make it thinner.
And transfer all cocoa mixture into whipped cream. Finally add in 1/4 cup of chocolate chips. And delicately fold until combined. Be careful not to break the whipped cream. Then pour the batter into the mold. The amount is just correct for a 6 inch round x 2 inch tall cake.
Now arrange marshmallows on top. I am using 10 large Rocky Mountain marshmallows which are cut in half.
And freeze for 6 hours or overnight.
Out of freezer, decorate with extra chocolate chips. And with a torch, burn the top of marshmallows. Also extra almonds are good for decoration.
