Hi, I am Eugenie. Today I am making a French brasserie food, Le Croque Madame. It’s quick, easy and delicious, croque (croquant) crunch and French.
Croque-Madame Recipe – French Ham Cheese Egg Sandwich
For 2 croque-madames (or mesdames :)
- 4 slices sandwich bread
- 1 teaspoon unsalted butter for bread
- 2 slices ham
- 1 oz of gruyere cheese
- 2 teaspoons unsalted butter for cooking
- 2 eggs
- Salt and pepper
First, butter the bread slices. Today I am using classic white sandwich bread. But if you like you can use any types of bread: whole grain, cereal, etc. and I am brushing melted unsalted butter and soften butter is also okay for spreading. Then arrange thinly sliced smoked ham over top. In French it’s jambon, and in Spanish jamon. And cover with grated or sliced cheese. Today I used gruyere, but you can use any kind of your favorite cheese. And cover with a slice of bread. Set aside.
In a skillet, over medium heat, melt a little piece of butter. Today I am using a heart egg mold, which is lightly buttered. When the pan is heated, Crack an egg into the pan and cook sunny side up until it’s firm and cooked to your liking. And season with salt and pepper. I like runny egg yolk, so now it’s perfectly fine. Set aside.
And again melt half teaspoon of butter and cook sandwiches for about 3 minutes each side. And that’s it. We don’t need any broiler, griller, oven for this recipe today. A simple French way.
Arrange an egg on top of the hot sandwich and serve immediately.
This is a delicious savory brasserie toast. I will make Croque Monsieur with béchamel sauce later.
