
Hi, I am Eugenie. Today’s video is nappage, strawberry fruit glaze, the last video of this week.
Nappage Recipe – Fruit Glaze
For 1 8-inch pie
Ingredients
- 1/3 cup strawberry jam (or apricot jam)
- 1 tablespoon granulated sugar
- 1 tablespoon water
Directions
First, in a small sauce pan, add in the strawberry jam, sugar, and water. Over medium-high heat, bring it to a boil, stirring constantly. Instead of strawberry jam, you can opt for apricot jam. In fact normally apricot is used to make nappage. But today’s recipe is for next week’s strawberry tart.
Once boiled, reduce the heat to medium-low, and simmer until syrupy. It shouldn’t be very thick because the glaze will thicken as it cools. Transfer to a fine sieve in a bowl and work the strawberry jam mixture through the sieve. You see? The glaze already thickened. This is nappage, fruit glaze, for brushing fruit tarts and pies.
Warm the nappage before using.

Don’t apply the glaze generously, your fruit tart might look fruit jelly. This recipe yield nappage enough for 1 8-inch pie.
