Easy Blueberry Cobbler Recipe

Hello, Today I am making a very easy blueberry cobbler for two. This recipe requires only 10-minute prep time and 6 ingredients. Enjoy!

 

Easy Blueberry Cobbler Recipe

For 2 people or one generous portion for 1 person

Ingredients

For cobbler top:

      • 2 tablespoons melted unsalted butter
      • 2 tablespoons granulated sugar
      • 3 tablespoons milk
      • 1/3 cup all-purpose flour
      • 1/2 teaspoon baking powder
      • Pinch of ground cinnamon or lemon zest, optional

For blueberries * read note:

      • 1 cup blueberries, fresh
      • 1 tablespoon granulated sugar
      • Extra 1 teaspoon melted unsalted butter for the baking dish

Directions

First, brush a shallow gratin dish with melted butter. Today I am making a cobbler for two people, or just one generous portion if you are a gourmand.

Arrange blueberries in the dish and sprinkle with 1 tablespoon of granulated sugar on top.

Then in a mixing bowl add in 2 tablespoons of melted unsalted butter, 2 tablespoons of granulated sugar, and 3 tablespoons of milk. And stir until combined. Today I don’t use sablage method. Then sift in 1/3 cup of all-purpose flour and 1/2 teaspoon of baking powder. And stir until just moistened. And fill in the dish over the blueberries. If you want to add more flavors, a pinch of ground cinnamon and lemon zest are very good.

Now bake in the oven preheated to 355 degrees F (180C) for about 25 minutes, or until puffed and brown.
Then let cool on a wire rack for 20 minutes.

Voila, quick and easy blueberry cobbler. Serve when it’s warm.

Bon appetit. This is my favorite way to eat blueberries. & I love whipped cream on the side.

Hm.. I love it but be careful your teeth and tongue will turn very blue.. LOL

Note

This is not a pie and also small portion recipe. If you want to double or triple the amount, you may want to toss the blueberries with 1 or 2 tablespoons of cornstarch. Personally I don’t like blueberries cooked with cornstarch or flour but this will make the blueberry filling less runny.

    It’s quite hard to find fresh blueberry in my country. The only fresh berry available here is strawberry. What other fruits suitable for this recipe? Thank you
