Decorate the inside, not the outside for the Valentine’s Day cake this year. Snow white outside but the most beautiful inside: a mille crepe cake with a hidden rainbow heart. Here goes how to make a crepe cake for Valentine’s Day, the best DIY Valentine’s Day gift. And because I designed this cake and loved it soooo much, I named this cake “Eugenie Cake”.
Mille Crepe Cake with Hidden Rainbow Heart
1. Mix eggs and sugar until pale.
2. Stir in vegetable oil and melted butter.
3. Whisk in milk and AP flour alternating in three times.
4. Make thin crepes over medium heat.
Make whipped cream filling.
5. Whip whipping cream until soft peaks.
6. Gradually add in sugar while whisking.
7. Add in the vanilla.
8. Also make rainbow color whipped cream using food colors.
Build the crepe cake.
9. Pile up the crepes adding whipped cream filling inbetween using the templates provided below.

10. Let set in the refrigerator for at least 2 hours up to overnight.
- 3 eggs
- 3 tablespoons sugar (45g)
- 1 tablespoon vegetable oil (15ml)
- ½ stick unsalted butter melted (55g)
- 1½ cups milk (380ml)
- 1½ cups all-purpose flour (185g)
- 2 cups whipping cream (480ml)
- 3 tablespoons sugar (45g)
- 1 teaspoon pure vanilla extract (5ml)
- Food colors of red, orange, yellow, green, blue, violet
- (or use your favorite mille crepe cake filling)
- Additional confectioners’ sugar for templates
