Hi, I am Eugenie. Today is Friday and I am making a simple and healthy roasted asparagus dish. This is a perfect appetizer for Spring time.
Roasted Asparagus with Lemon, Balsamic and Parmesan
• 1 pound asparagus
• 3 tablespoons olive oil
• juice of 1 lemon
• balsamic vinegar
• grated Parmigiano, Parmesan cheese
First, trim off the woody ends of asparagus. And spread asparagus on a parchment paper- lined baking sheet, or an aluminum foil covered sheet. It’s for easy cleaning later. And drizzle with olive oil and freshly squeezed lemon juice on top.
And bake at 390 degrees F. (200 C.) for about 10 minutes, or until lightly browned and tender. Transfer asparagus to a serving dish and drizzle with balsamic vinegar, and additional lemon juice (optional), and grate Parmesan over the asparagus.
Don’t forget to season with salt and freshly ground pepper.
